The grapes undergo fermentation based on their ripeness and vineyard location, either through direct berry pressing or whole-cluster pressing, followed by a cold soak (maceration) overnight. All fermentations take place in stainless steel and age on fine lees for 6-8 months, occasionally stirred (battonage).
